These yummy white chocolate macadamia nut bars are packed full of white chocolate chips and macadamia nuts. Melted white chocolate and brown sugar give them a fudgy chewy texture making them a little bit brownie and a little bit cookie.

Not only are these bars delicious but you’ll find they are super easy to whip up. You can mix it all by hand if you want, I did.
Let’s make some white chocolate macadamia nut bars!
First, melt a 1/2 cup of butter and 3/4 cup or 6 ounces of white chocolate chips in a microwave-safe bowl on high for about a minute. The chocolate chips might not be fully melted but the butter will be hot enough to continue to melt them. Just stir until the chocolate finishes melting and the mixture becomes smooth.
Next whisk in 1/2 cup each of granulated sugar and brown sugar. Then 2 eggs and 1 teaspoon of vanilla.
In a separate bowl, whisk together 1 1/2 cups of flour, 1/2 teaspoon of salt, and 1/4 teaspoon baking soda.
Stir the flour mixture into the butter mixture. Then finally, fold in another 1/2 cup of white chocolate chips and 1/2 cup of macadamia nuts.
Line a 13″x9″ baking pan with parchment paper or spray with non-stick cooking spray. Whichever you have on hand.
Bake the bars at 350 degrees for 20-25 minutes or until golden and a toothpick in the center comes out clean.
Allow to cool completely and cut into bars. I popped them in the freezer for about 20 minutes when they were fully cooled. Then used a sturdy bench scraper to cut them so that the edges were nice and crisp. But they are good warm straight from the pan too!
