These Trail Mix Chocolate Chip Cookies are the perfect combo of sweet, salty, and crunchy. With the kids back in school, I was trying to come up with a different treat for lunch boxes and after-school snacks. They love trail mixes and cookies so I combined the two.
Mix up the Cookie Dough
The base of the cookie is a simple chocolate chip cookie batter with peanut butter and oats for taste and texture. Cream together butter, granulated sugar, and brown sugar. When the mixture is light and fluffy add some eggs and vanilla. Next, add in some peanut butter. If you don’t want to use peanut butter because of allergies or you just don’t like it, almond or sun nut butter would taste great too. Use whatever nut butter you want. After the mixture is all combined, stir in some flour, salt, baking soda, cornstarch, and oatmeal just until combined.
What to Add-In
Now for the fun part! To make this a trail mix chocolate chip cookie, we need to add some chocolate chips and the trail mix. Now this part is all about your preferences. Stir in your favorite things you might find in trail mix like dried fruits, crunchy, salty nuts, cereal or pretzels, and then some sweet chips or candies. Get creative with your choices. Get the kids involved. It is a great way to get them interested in cooking and baking. They may not be able to crack an egg but they can pick out some items to add in and help count or even pour.
For the chewy dried fruit part, I chose dried cranberries and cherries because for some reason my kiddos don’t like raisins unless they are covered in yogurt. For the salty part, I crushed up some pretzel pieces. Then for the sweet, I added a mixture of chocolate chips, butterscotch chips, white chocolate chips, and M&M candies.
After all the goodies are mixed in, use an ice cream scoop to scoop the dough onto a parchment lined cookie sheet. Then bake in a 350° oven for 12-15 minutes depending on how big you scoop the cookies. I used a big scoop so it took about 15 minutes for the cookies to set and turn golden brown.
