This Tiramisu cake is a delicious take on the classic Italian dessert. Vanilla cake is soaked in an espresso simple syrup and layered with a fluffy mascarpone cheese frosting.

Bake and Make
To start I whipped up my vanilla cake recipe and baked it in three 6″ cake pans. For three 8″ pans just double the recipe.
While the cake was baking, I whipped up some mascarpone cheese frosting. Begin by whipping together butter, shortening, and mascarpone cheese on high speed in the bowl of an electric mixer. You want to get the mixture super creamy and fluffy, then slowly incorporate some powdered sugar. Finally, add a pinch of salt and vanilla extract. Fill a pastry bag with the frosting and set aside for when the cake is ready.
For the espresso element, I made an espresso simple syrup. Stir together equal parts water and sugar over medium heat until the sugar is dissolved. This will take about 5 minutes or so. Add in a teaspoon of espresso powder or a tablespoon of instant coffee whichever you have on hand. Stir until it dissolves. After the syrup cools, transfer to a squeeze bottle and set aside for when the cake is ready.
Assemble the Tiramisu Cake
When the cakes are cooled and the frosting and syrup are made, it is time to assemble this little beauty. Start by placing a dollop of frosting on your cake board or plate so that the cake stays put. Then place your first layer down and generously soak it with the espresso syrup. Then top with a generous layer of the mascarpone frosting. Add another layer of cake and follow with the syrup and frosting. Top with the final layer of cake and the syrup. On this top layer, don’t add as much frosting.
I was making a naked cake so at this point, I simply used a bench scraper to smooth the sides of the cake and the top. Like with a traditional tiramisu, I generously dusted the top of the cake with cocoa powder.
To decorate, I made some easy star tip flowers, popped them in the freezer until they hardened and arranged them on the cake, then added some leaves and the centers. This cake elegant cake makes a delicious statement. Go on get your tiramisu cake on!
