For Father’s Day, my kiddos and I decided to make an ice cream cake for their Dad. We had a busy day planned with big breakfast together in the morning then out to lunch and the movies and topped the day off with his favorite meal (steak and potatoes) at home. With all that going on this ice cream cake was a simple treat at the end of the day. Plus it was easy to put together the day before with a few ready-made things. It’s a perfect summertime treat. No oven needed.
Here is what you will need to make this ice cream cake:
a loaf pan
parchment or wax paper
one cup of rice crispy cereal
1/2 cup of chocolate chips, divided
1 half gallon of vanilla ice cream
1 eight-inch layer of cake cut into pieces
First, put your ice cream in the fridge for about an hour to soften it.
While the ice cream is softening, melt 1/4 cup of the chocolate chips. Then stir the cereal into the melted chocolate. Lastly, spread the mixture out evenly on a parchment or wax paper-lined baking sheet and place in the freezer to harden.
When the ice cream is softened and the chocolate cereal mixture hardened, line the loaf pan by layering two pieces of the plastic wrap. Place them going each way with enough left hanging over the side to fold over and cover the finished cake.
Next spread one-third of the ice cream into the bottom of the loaf pan. Break up the chocolate cereal into smaller pieces if necessary and top the ice cream layer with it. Then spread another third of the ice cream on top of that.
Then cover that layer with the cake. Then cover the cake with the last of the ice cream.
Finally, wrap the excess plastic wrap over the top and place in the freezer overnight or as long as possible.
To remove from the pan, unwrap the plastic carefully from the top and lift up on the plastic to loosen. Then place your serving plate upside down on the pan, and flip both over. The plastic wrap should make it come out fairly easy. But if not you may have to let it sit for a minute. Carefully remove the rest of the plastic and put back in the freezer for about 30 minutes to firm back up.
You can serve it just like it is or add some decorations! To do this, melt the remaining 1/4 cup chocolate chips. Next, fill the plastic baggie with the melted chocolate and snip the end. Then on parchment or wax paper pipe out some decorations. I printed out #1 Dad and put it under the parchment to use as a template. You could write whatever you wanted or just make some swirls or shapes. Once finished, place the parchment in the freezer to firm up.
When ready to serve, pop the decorations off the paper and place on top of the cake.
There are several things about this cake that I love besides the yumminess. The first is that you can easily double it to make a bigger cake. I made ours in a loaf pan because it was just the 5 of us. Doubled it will make an 8 inch round cake. The second is that each part of it can be store bought or homemade. The third thing is its versatility. Use any flavor cake or ice cream. Use broken cookie pieces or candy bars or cookie dough instead of the cereal component. Use sprinkles or chocolate shavings to decorate it instead of the melted chocolate. The sky is the limit on combinations. With a recipe this easy what’s stopping you? Go get your ice cream cake on!
