My son loves watching all the gummy coke bottles and giant gummy worms videos on Youtube. He has been begging me to make a giant gummy rainbow cupcake. I finally relented and we made one together.

Fair warning this was quite time-consuming. Each color needs 10 minutes to sit before cooking and then about 10-15 minutes to set up before adding the next. It is Spring Break for us right now so we had the time. It was a fun project to work on together to keep busy.
If you don’t want to make a giant gummy rainbow cupcake. You can just make one batch of the gummy mixture and pour it into small silicone molds or ice cube trays.
Supplies you’ll need to make your own giant gummy rainbow cupcake:
1 giant cupcake silicone mold
microwave safe bowl(s)
spatula and/or whisk
6 oz box of red strawberry or raspberry flavored gelatin
6 oz box of orange flavored
6 oz box of yellow lemon flavored gelatin
6 oz box of green lime flavored gelatin
6 oz box of blue berry flavored gelatin
6 oz box of purple grape flavored gelatin 24 packets (1/4 oz each) of unflavored gelatin
1/2 cup water + 3 tablespoons for each color
First place the giant cupcake mold on the sheet pan for stability then set aside.
To make the gummy mixture:
Pour 1/2 cup + 3 tablespoons cold water into a microwave safe bowl. Then sprinkle 6 oz of the flavored gelatin and 4 packets of the unflavored gelatin over the water. Let it sit for 10 minutes to give the gelatin time to bloom. After 10 minutes have passed, it will look like a stiff slushy. Microwave the mixture for about 1 minute and 30 seconds or until it turns to liquid and forms a foam on the top. Now pour the heated gelatin mixture into the mold.
A gummy mixture will need to be made for each color. This is a layering process. So for each color, I made a gummy mixture poured it into the mold then transferred it to the freezer for about 15-20 minutes. While that color was setting up, I started mixing the next color which took just enough time for the previous color to set up in the freezer.
We repeated the process for all 6 colors following the rainbow acronym ROYGBV or red, orange, yellow, green, blue, violet (purple). You can do whatever color combo you want!
Our mold is 2 pieces, a top and bottom of a cupcake. After pouring the yellow lemon, we skipped ahead to purple grape to start filling the top. Then followed that with the blue berry into the top as well. Finally, we mixed up the green lime last filling the remainder of the bottom of the mold and the rest in the top.
After all of the colors have been added to the mold, we have to wait again until the whole cupcake is fully set. We stuck ours in the freezer for an hour.
Time to unveil our gummy creation:
With the gummy fully set, it is safe to remove it from the mold. A silicone mold makes this part really easy. Gently loosen the mold a bit from the gummy. Turn each piece of the mold over onto a sheet pan lined with wax paper. Peel the mold back to reveal the gummy. Finally, stack the pieces together like a cupcake. I thought I might have to use some heat like a blow dryer or kitchen torch to get the pieces to stick together. Turns out they were just tacky enough that it stayed in place fine without it.
The lovely giant gummy rainbow cupcake can be sliced up and enjoyed. Or just take a giant bite out of it like my kiddo! However you choose to enjoy it, just get your giant gummy rainbow cupcake on!
