Do you love cookie dough? This chocolate chip cookie dough pie is for you! It combines an eggless cookie dough filling with the deliciousness of a chocolate cream pie.

I love cookie dough. When I make cookies, I think I eat more dough than actual cookies. But hey everyone wins! The kids get cookies and mommy gets her cookie dough fix. Everyone wins with this chocolate chip cookie dough pie too! Chocolate chip cookie dough in every bite.
The first thing to do is make the graham cracker crust. You can buy already made graham cracker crusts and even kits so do whatever floats your boat in this step. I made mine from scratch with graham cracker crumbs, melted butter and brown sugar then baked it in a springform pan until it was golden and delicious looking. I set it aside to cool while I mixed up the scrumptious fillings.
The chocolate chip cookie dough filling is mixed up just like a cookie dough except heavy cream is used as a binder instead of eggs. Cream the butter and sugar together then stir in the salt, vanilla, and flour. Add in the heavy cream to bring it all together. Then finally stir the chocolate chips. Set this aside and get started on the chocolate pudding.
This chocolate pudding is what you might find in a chocolate cream pie just a little bit less so the chocolate cookie dough is the star. Now I know making a pudding from scratch can sound sorta scary. But don’t worry, I promise this one is super easy. In a sauce pan, whisk together flour, cornstarch, sugar, cocoa powder together. Then whisk egg yolks and milk into that.
The mixture will look pretty rough at first. Once the heat hits it, it will start to smooth out. Place the pan over medium heat. Whisk and stir continuously while the mixture comes together and thickens. Your arms will get a nice workout but it’s worth it. This will take about 5-10 minutes. Remove from heat and stir in a tablespoon of butter and some vanilla. The mixture should be smooth and thick with a nice shiny look to it. Allow to slightly cool so when poured over the chocolate chip cookie dough it isn’t just a sloppy mess.
Now to assemble. One step closer to eating! First evenly spread the chocolate chip cookie dough in the graham cracker crust. Then spread the chocolate pudding evenly over the chocolate chip cookie dough. Are you drooling yet? Sorry. Now it needs to chill for at least an hour so the pudding can set. You can lick the bowls though to tide you over.
While the pie is chilling, whip some heavy cream and a tablespoon of sugar until stiff peaks form.
I made my pie in a spring form pan so I needed to remove the outer ring. After it was chilled, I used a wet knife to run just around the edge of the pudding and then released the latch and lifted it off. If you don’t have a springform pan a regular glass or metal pie pan is perfect and you can skip the step of removing the ring.
Time for the whipped cream. Spread it in an even layer over the top. If you want to get fancy you can pipe it. I was pretty sure it wouldn’t last long enough to really admire any fancy piping so I went for the rustic look. As a final touch, I did add some chocolate shavings over the top.
